Spanish recipe: albóndigas
Tapa of meatballs with tomato sauce a popular tapas, easy to prepare
Ingredients:
(serves 4)
For the meatballs
- 1/2 kg of mixed minced meat
- 3/4 cup breadcrumbs
- 2 cloves garlic - pressed
- 1 egg
- 1/2 teaspoon nutmeg
- 1/2 teaspoon freshly ground black pepper
For the sauce
- 1/2 onion - chopped
- 2 cloves garlic - minced
- 1/2 green pepper - diced
- 1 can peeled, chopped tomatoes 400 ml
- 80 ml dry white wine
- 175 ml chicken stock
- to 1/2 teaspoon black pepper
- olive oil
- chopped parsley
Preparation
- Mix minced meat, breadcrumbs, eggs, nutmeg, pepper and garlic.
- Roll balls of the minced meat mixture (about 4 cm in diameter)
- Heat oil in a frying pan and fry the balls
- In another pot prepare the sauce: heat oil and fry the onion, the garlic and add pepperand let simmer until the onion is soft
- the tomatoes, wine, chicken stock and pepper
- it a 15 - minute number simmer
- then add the meatballs to the sauce
Serve
- with bread
- Garnish with chopped parsley
